-4 ears of corn
-1/4 cup butter
-2 Tablespoons mayo
-Pico de gallo seasoning
- Fill a large pot about 3/4 full of water and bring to a boil. Gently place ears of corn into boiling water, cover the pot, turn off the heat, and let the corn cook in the hot water until tender, about 5 minutes.
- Butter the ears of corn, and then spread mayo over the butter.
- Sprinkle pico de gallo seasoning, queso cotija, and squeeze lime on top of corn.
