Latin Corn on the Cob

We LOVE this recipe.  It always reminds us of the movie Nacho Libre!  :)  

Ingredients:
-4 ears of corn 
-1/4 cup butter
-2 Tablespoons mayo
-Pico de gallo seasoning
-Queso Cotija
-Lime 

Directions:
  1. Fill a large pot about 3/4 full of water and bring to a boil. Gently place ears of corn into boiling water, cover the pot, turn off the heat, and let the corn cook in the hot water until tender, about 5 minutes.
  2. Butter the ears of corn, and then spread mayo over the butter. 
  3. Sprinkle pico de gallo seasoning, queso cotija, and squeeze lime on top of corn.
  4. Enjoy!
