Awesome Raspberry Lemonade

We found this recipe at the Preston Rodeo years ago, and it is now a family favorite!!!!  We love this on HOT days!!!!  

WARNING....  this will ruin you from enjoying other lemonades.  We have not found a lemonade better than this.  

INGREDIENTS
    • 1 Mason Jar
    • 2 cups cold water
    • 1/4 cup Sugar
    • 1/2 Lime
    • 1/2 Lemon
    • 3 Raspberries
    • 2 Ice-cubes

INSTRUCTIONS
    1. Mix the cold water and sugar in a mason jar.   
    2. Squeeze 1/2 lime and 1/2 lemon into the jar.
    3. Smash raspberries with (clean) fingers and add to the mason jar.
    4. Shake like CRAZY!!!!!
    5. Open the jar and add ice-cubes.
    6. Enjoy!!!!!!
NOTES: Makes 1 serving.

Homemade Canned Salsa

We put salsa on almost everything!!!  This recipe came from my mother in law and it is the BEST canned salsa recipe I have found yet!!!  Even my little boy loves it.  You can bet I will be canning at least 60 of these a month from now.  It is great with large tomatoes or small cherry tomatoes.   
YIELD 20 cans

INGREDIENTS
    • Tomatoes 25 (Large)
    • Cilantro 2 1/2 bunch
    • Serrano peppers 3
    • Onion 2 large
    • Garlic salt 1/2 teaspoon
    • Salt 1/2 tsp
    • Pepper 1/2 teaspoon
    • 1/2 cup white vinegar
INSTRUCTIONS
    1. Poor hot water over tomatoes. Peal and take out stem
    2. Puree tomatoes and add to pressure cooker pot.
    3. Add other ingredients
    4. Stir and heat up.
    5. Follow canning instructions
    6. If using steamer: steam for 40 minutes.
NOTES: Makes 20-22 cans.

Pork Carnitas

Ingredients:
4 pounds pork butt or shoulder, trimmed and cut into cubes
1 1/2 tsp salt
3/4 tsp pepper
1 tsp cumin
1 onion peeled and halved
1 tsp dried oregano
2 Tbs lime juice
2 cup water
1 orange juiced

Heat oven to 300 degrees. combine all ingredients in a large dutch oven. Bring mixture to a simmer over medium high heat. Once it simmers cover and place in oven for 2 hours.
Remove from oven and turn on broiler. Remove meat from dutch oven and place on a foil covered jelly roll pan. Remove everything from the pot except the liquid. Boil liquid until becomes syrupy. With a fork separate meat. After liquid becomes syrup add meat back in try not to break the meat to much. Spread meat mixture on pan and broil about 5 minutes till edges are slightly crispy.

Serve with tortillas or make your favorite salad.

Latin Corn on the Cob

We LOVE this recipe.  It always reminds us of the movie Nacho Libre!  :)  

Ingredients:
-4 ears of corn 
-1/4 cup butter
-2 Tablespoons mayo
-Pico de gallo seasoning
-Queso Cotija
-Lime 

Directions:
  1. Fill a large pot about 3/4 full of water and bring to a boil. Gently place ears of corn into boiling water, cover the pot, turn off the heat, and let the corn cook in the hot water until tender, about 5 minutes.
  2. Butter the ears of corn, and then spread mayo over the butter. 
  3. Sprinkle pico de gallo seasoning, queso cotija, and squeeze lime on top of corn.
  4. Enjoy!

Asian Chopped Salad~ Kelli Roethel

Summertime is the time for light yummy salads. This one is perfect for those bbq's

Ingredients:
Chopped Savoy and Napa Cabbage
1 Cup of shredded carrots
1 Cup of chopped Celery
1 Cup Sliced almonds
1 Cup Wonton or chow mein Noodles
1/2 cup chopped cilantro
1/2 cup chopped green onions
2 Tbs. Sesame seeds
Paul Newman's Sesame Ginger salad dressing( Enough to coat salad)

Chicken or shrimp to make an entree instead of side
 
mix all ingredients together, put in container with a lid, shake until everything is coated.

Love this salad so easy and so yummy.

Ham & Egg Cupcakes

My hubby came home the other day and said, "I have a great idea for breakfast tomorrow!!!"  Try this... and the Ham & Egg Cupcake was born!  :)  

prep time: 5 minutes
cook time: 15 minutes
Total time: 20 minutes 

Ingredients: (per cupcake)
2 piece of brown sugar deli ham
1 egg 
1 TBSP colby/jack cheese

Directions:
-heat oven to 325 Deg.
-Get out a cupcake pan.  
-Do not spray the pan, but determine how many cupcakes you want. 
-Fill each cupcake with 2 pieces of deli ham.
-crack an egg over ham in each cupcake.
-top with 1 tbsp of colby/jack cheese.
-any unused cupcake tins put 1/4 cup of water in.  (This will preserve the life of your pan.) 
-Place in oven and cook 15 minutes.  
-Let cool and enjoy!

 We are all loving the warm weather, but who doesn't want some yummy cookies still? Here are some you will love without turning on the oven and heating up your house.


prep time: 15 minutes
cool time: 1 hour

Ingredients:
8 Cups cornflakes
1 1/2 cups Butterscotch chips
1 1/2 cups Peanut Butter chips

In a large bowl measure out the Cornflakes. Melt in a Saucepan the Butterscotch chips and the Peanut butter chips. poor over the cornflakes mix until all cornflakes have been covered. Spoon out about hand sized cookies onto a greased cookie sheet. Place in Fridge for 1 hour until cookies are hard. Eat and enjoy.

Rosemary Ranch Chicken

This is a great recipe for these Warmer days and nights. We love grilling and eating healthy.

















Prep time:10 Minutes

Marinate time: 1 hr.

Cook Time: 20 min

Ingredients:

 1 lb. Chicken breast or Thighs

1/4 Cup olive oil

1 pkg. Dry ranch dressing mix

1 Tbs. fresh rosemary chopped

2 Tbs. Worcestershire sauce

1/4 cup White vinegar

2 Tbs. lemon juice

1 tsp. salt




Cut up chicken and put in marinade for at least 1 hr.

You can either grill the chicken whole or cut up on skewers.




We serve ours with fresh grilled veggies.

A Year With Six Sisters' STUFF Book Review

A struggle in my home as been our food.  My hubby is a picky eater.  Well, not really a picky eater because he will eat all kinds of food, but he wants his food to be healthy, taste good, look good, and help him meet his goals as a World Ranked Powerlifter.  After years of competing as a figure competitor I am cool with just tuna fish, oatmeal, and green beans for meals, but not him.  Since I could care less about my food, as long as it is balanced, when I cook... I cook for him.   Like most women I have a plethora of cook books on my bookshelf, stashed in drawers and in boxes around my house, and each time I get a new one I sit down with my hubby to see what he would like to eat.    After reviewing, "A Year With Six Sisters' Stuff: 52 Menu Plans, Recipes, and Ideas to Bring Families Together", by hubby replied, "Wow, this is one of the best cookbooks that you have brought me!"   That is a HUGE complement coming from him.  Almost every recipe in the cookbook he wanted me to make.  

Here is my review of a few of the recipes in the book:

Strawberry Lemonade Slush:  This is a slush drink that is super refreshing.  I can't wait for summer to make this a staple at bbq's.  
Restaurant-Style Onion Rings:  We love onion rings, but whenever I have tried to make them the batter falls off the onions and my deep fryer becomes an awful mess.  I was able to make great onion rings in my home deep fryer.  Finally!!!!  A onion ring recipe that actually works!!!!
Pina Colada Cake:  This cake was awesome.  I actually hate shredded coconut on food, so I prepared the cake and just left off the shredded coconut.  The cake was still GREAT. 
Korean Beef:  Usually you would prepare Korean Beef with white rice, but we were having a "no carb" day so I left out the rice and made the Korean Beef and one of my favorite Oriental Salads to go with it.  It was in a word, wonderful.  I mixed the Korean Beef in with my salad and my hubby preferred his on the side, but we both loved it.  

And on and on....

We are so excited to keep trying lots more of them!!!

Not only did this book have more than 150 recipes, it had the cutest ideas for new family traditions that we are excited to start as holidays approach.  The only problem now is that my business partner Kelli wants to borrow it.  The good thing is I know exactly what to get her for an Easter present. I don't think I want this book leaving my house.  :)

Recipe Monday - Green Chili Eggs

This is one of my families favorite breakfasts. We usually save this breakfast for someone's birthday.  Since my hubby just had his birthday, I was able to get a picture of it.  I hope your family likes it as much as mine.  

Green Chili Eggs
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Yield 2 servings

Ingredients
  • 1 tablespoon olive oil 
  • 5 large eggs
  • 1/3 cup heavy whipping cream
  • 1/2 can diced green chili's
  • 1 tablespoon diced white onion
  • 1/4 cup shredded Colby/jack cheese
  • 2 slices bread
  • 1 tablespoon honey
  • butter
  • Salt and pepper to taste 
Instructions
  • Dice up onion and add onion and green chili's to bowl.
  • Add eggs and heavy whipping cream
  • Heat frying pan and add olive oil
  • When oil is hot add egg mixture and cook eggs until done, salt and pepper to taste.
  • When eggs are done top with colby/jack cheese and put lid on frying pan to let cheese melt.
  • Put bread in toaster and toast to liking.
  • Top toast with butter and honey.
  • Serve & wait for the complements!!!
