4 pounds pork butt or shoulder, trimmed and cut into cubes
1 1/2 tsp salt
3/4 tsp pepper
1 tsp cumin
1 onion peeled and halved
1 tsp dried oregano
2 Tbs lime juice
2 cup water
1 orange juiced
Heat oven to 300 degrees. combine all ingredients in a large dutch oven. Bring mixture to a simmer over medium high heat. Once it simmers cover and place in oven for 2 hours.
Remove from oven and turn on broiler. Remove meat from dutch oven and place on a foil covered jelly roll pan. Remove everything from the pot except the liquid. Boil liquid until becomes syrupy. With a fork separate meat. After liquid becomes syrup add meat back in try not to break the meat to much. Spread meat mixture on pan and broil about 5 minutes till edges are slightly crispy.
Serve with tortillas or make your favorite salad.
